The Ribs are On


I just put on six slabs of ribs on my big green egg with apple and hickory chips, along with big green egg lump charcoal to get started for Easter dinner.

The great experiment starts at the NC faction of the Boucher household today. I just put on six slabs of ribs on my big green egg with apple and hickory chips, along with big green egg lump charcoal to get started for Easter dinner.

My goal is to cook around 200 - 225 for about 5 hours. I found the instructions on what someone did here so I hope it all works out. I also found a recipe for some BBQ sauce that we've done before that is primarily mustard based so going to get that on the stove once I'm sure the heat is steady between 200 and 225.

At this point my biggest concern is that is six slabs enough for 9 meat eater adults, an adult vegetarian, and 7 meat eater kids?

I don't think we could fit much more on the egg at this point. Going to fire up some blackened chicken fingers on the gas grill to see if we can make them less hungry up front :)

I don't think there will be any leftovers short of a disaster.
